Rainbow Pancakes and Fruit Skewers
These rainbow pancakes and fruit skewers are the perfect kid friendly recipe for a fun breakfast or any rainbow themed party!
If you are a parent of kids under the age of about… ummm, 10, you know the drill. Picky eaters is their theme. I got to the point that if my daughter asked for dessert for breakfast one more time I would scream! (for the record, she gets a healthy breakfast every morning… she doesn’t always actually eat it though).
Why not work this awesome idea into the mix? With just a little extra prep you can totally make your kid’s morning AND it’s basically super healthy. Your kid will literally be eating the colors of the rainbow!
But seriously, why limit this awesome idea to breakfast? This would be great for an after school snack, St. Patrick’s Day, a spring or summer celebration, or any rainbows and unicorn themed party. This is pretty much one of the cutest ideas ever! Such a great fun kid food concept for sure!
Ingredients
For pancakes:
- 2 cups flour
- 3 tablespoons sugar
- ยฝ teaspoon salt
- 1 tablespoon baking powder
- 2 eggs, beaten
- 1 teaspoon vanilla extract
- 1 ยพ cups milk
- ยผ cup (ยฝ stick) butter, melted but cooled slightly
- Food coloring: blue, yellow, red, green
For Skewers:
- Wooden skewers
- Kiwi
- Orange slices
- Strawberry
- Banana Slice
- 2 Blueberries
- 1 Purple Grape
Make approximately 10 to 16 small pancakes
How to make the rainbow pancakes
1. In a medium bowl, whisk together dry ingredients: flour, sugar, salt, and baking powder.
- In a separate bowl, whisk together the eggs, milk, and vanilla. Then, slowly add the butter.

Create a well in the middle of the dry ingredients. Pour wet ingredients into the well and stir the batter until combined. There may be small lumps. Allow the batter to rest at least 5 minutes.
- Divide batter into 6 portions. Add 3 drops of food coloring to each to create red, orange (2 drops yellow and 1 drop red), yellow, green, blue, and purple (2 drops blue and 1 drop red).

Heat a griddle to 300 degrees. Spritz with non-stick cooking spray for coat with additional butter prior to adding batter.

Pour about 1/4 cup of batter on the griddle. When bubbles begin to break on the surface of the pancakes, flip and cook an additional 2 to 3 minutes or until completely cooked through.

To create perfect circles, use a biscuit cutter or cookie cutter.
ASsemble the Rainbow Pancake Fruit Skewers
- Start with purple at the bottom and stack the skewer purple, blue, green, yellow, orange, red.

Thread the purple pancake down to the bottom of the skewer, add the purple grape (lengthwise).

Add the blue pancake and 2 blueberries. Then add the green pancake and kiwi slice.

Next add the yellow pancake and banana slice and the orange pancake and orange slice.

Finally add the red pancake and top off the skewer with a juicy strawberry (whole).
